As the founder of his own restaurants, Just Rotterdam and Mondi, he learned what makes a hospitality business actually work: not just the concept and the menu, but the kitchen workflow, the cost control, the team, and the hundred daily decisions that determine whether a restaurant survives its first year.
That operational grounding became the foundation for something broader. Over time, Justin's focus expanded from running individual restaurants to developing hospitality concepts and kitchens for others, and eventually to the wider work of preparing and positioning real estate and hospitality projects. That work draws on the same instinct: understanding how something actually functions before you try to sell it, finance it, or scale it.
